I made this for dinner today. Cheap, quick, and yummy:

1 cup grated cheddar cheese
1/2 cup Bisquick
1 cup milk
2 eggs
8 slices crisp bacon, crumbled (I use turkey bacon)

Put the bacon and cheese in a greased 9-inch pie pan. Whisk up the other ingredients and pour on top. Bake in a 400 degree oven for 25 minutes. And that's all you do!

You can also substitute the bacon with anything. Cooked chicken, vegetables, whatever you have in the fridge.

Serve with tossed green salad.

I was craving those cheddar bay biscuits from red lobster one time when we moved to nevada and found a similar recipe except instead of bacon i had to use dried parsley...bacon definitely sounds better though. Are you still in San Diego or did you move to LA like you were telling me? We moved to Pahrump in July but it sucked so much we moved back.
