German usage questions

prushrush, but if you speak German, feel free to contribute...I need to know three things for a "Legend of the Galactic Heroes" fanfic:
1. Does the U in "von Musel" have an umlaut?
2. Annerose's father calls her "liebchen". I use this because it's the only German pet name I know. Does anyone have a better one?
3. What is the word for a German apple cake (not a streudel)? It almost doesn't matter which one.
